(Upper Goulburn Valley, Vic) Produced from the Tallarook vineyards (Sensational Hornfels blocks) and other Central Victorian producers. It is classical co-fermentation of Viognier pressings with destemmed Shiraz (Cote Rotie style) after Viognier juice free run is separated off. Portions of Shiraz have seen micro- oxygenation, low level French Oak for 4-5 months and put through malolactice qualities of the Viognier which form together to make a seamless palate.
